Good recipes for bottom round?

Postby Brad Hutchison » Fri Nov 09, 2007 10:13 am

Giant Eagle had bottom round steaks on special yesterday, but I don't think I've ever worked with that cut before. Is it best for grilling? Stewing? Riding with it under my saddle?

Brad

If you're going to grill it, I'd marinate overnight and slice it thinly. Probably would be a better bet to use in stew/soup....But, if you chop it coarsely, it would be dynamite in chili.

I use this cut for Swiss Steak.

The bottom round worked well as pot roast. I seasoned it up and cooked it in the crock pot with potatoes, onions, and garlic. It was very nice.
